About the only podcast in English I listen to is the Interesting Thing of The Day http://itotd.com/. It has transcripts.
I listen to assorted sports podcasts from Espn… (and a soccer one from Britain) and I also listen to the Adam Corolla show, which I think is hilarious… None of them have transcripts though…
