The coins are what contribute toward you achieving your daily streak; the more you engage with a particular language within the app, the more coins you gain toward your daily streak. It mostly serves the purpose of stimulating your happy chemicals and keeping you engaged with the language and with the app. There used to be an avatar that you could buy different items of clothing and accessories to dress them up, however that was removed.
