I’m looking for books or courses on how to teach/learn a language with the “immersion method”. I’m an English teacher and I want to teach my students the way I learned, instead of the traditional way, but I didn’t learn with a teacher, so that’s when it gets difficult.

For my students (or their parents), I prepare a list of content that is going to be understandable, interesting, and accessible for them. If anything may require instructions, I prepare them step-by-step (e.g., how do you access dubs/subtitles for less common languages on Netflix).
Because many of my students are very young, they are simply not ready for in-depth discussions about how we learn, but they certainly know that they like Pokemon, Star Wars and Frozen. If my homework consists of hey, watch an episode of The Clone Wars on Disney+ every day this week and write one sentence about it, I tend to have a pretty high success rate in getting participation.
With adults or parents, I can have the conversation and it is pretty simple. The more time they spend engaged with native content outside of class, the more they will learn.

I’m learning Greek and would like to support my children learning it. So in a different way I am looking to teach a language I don’t know.
I’ve just got Bard A.I. to generate ten sentences.
I did it on the subject of cats. This set of sentences is on the subject of the language itself.
LingQ can show the text, translation and audio so I’ll present each sentence and let people respond, repeat or just read. This might help engage people at different levels.
I realise you’d have to read the text but you could have it pre-translated.
This would be comprehensible input (translated) and repeat key words. Plus audio. That hits some targets.
The Bard instruction for the topic of cats was:
