I want to move my billing date from the 23rd of the month to the 25th.
I can’t see how to do that so would it just be a case of cancelling and then restarting on the 25th?
If so will I loose my progress/ known words?

Sorry but I can’t adjust renewal date for Apple subscriptions. You will need to cancel and then re-start subscription on 25th. No worries, you progress will remain saved.
