I set the course level, but I notice for every new lesson in the course, I must set the lesson level. Could you please default this to the course level?

You don’t need to set the course level or the lesson level. Leaving it unknown won’t change anything for you personally. It only becomes somewhat important if you plan to share the lessons.
Assigning a level for a course should automatically apply to all lessons in that course. We will look into it.
