    fly in a helicopter means to be a passenger, can I use the verb “take” instead of “fly”?
    fly a helicopter means I am the pilot, right?

How about “fly in an airplane”? Do you say that?

That’s right. 1) assumes you are a passenger. 2) assumes you are a pilot or the one driving the vehicle You could use take but the sentence would be slightly different.

I’m going to take a helicopter.

Yes you could also say fly in an airplane.

I’m going to fly in an airplane.
